A highly flavoured cured sausage premix for the production of Kransky.
A great starter to leave as is or add cheese, honey, chili etc..
3kg premix, 8kg water, 25kg pork 75 trim, 10kg beef 80-85 trim, 4kg cheese cubes, total 50kg,
mince meat to required texture, mix meal and water together to form a slurry, mix meat and slurry together, mince again, and fill out into desired sausage casings
