simply Mix 11.25kg of minced meat and fat (20% fat)
with 1.25kg of meal, add 2.5kg of iced water.
Mince meat to required texture.
Mix meal and water together to form a slurry.
Mix meat and slurry together.
Mince again
fill out into sausage casings
