Whole olives, pitted 250 g
Whole peppercorns 40 g
Whole Pistachios 350 g
DIRECTIONS: 260 grams premix, 1500ML water,
Pork trim lean 3kg, Pork Trim Fatty 4kg, Beef trim lean 3kg.
Total 11.760kg
Mince meat to required texture,
Use 3mm mincer plate for best result.
Mix meat, water and premix together in a food processor.
Fill out into sausage casings of your choosing.
Fibrous casings for best result (non edible used for forming sausage shape).
Poach sausages in water at 75° C for 60 min to an internal meat temperature of 70° C.
Cool in cold water and refrigerate.
