Mixing Guide

For every 1kg of meat & fat:

• 140g BBQ Plum Premix

• 230ml cold water

For the full 1.4kg pack:

• 10kg meat & fat

• 2.3 litres cold water

Directions

1. Mince meat to the required texture. A coarse grind using an 8–10mm mincer plate is recommended.

2. Mix the premix and cold water together to form a slurry.

3. Add the slurry to the meat and mix thoroughly until the mixture becomes sticky and proteins are extracted.

4. Mince the mixture again. For a coarse sausage texture, an 8–10mm mincer plate is recommended for the final mince.

5. Fill into casings.

6. Refrigerate or freeze after manufacture.
